Baked Chicken Thighs with Hot Honey
Ingredients
2 pounds Do Good Chicken Thighs
3 tablespoons olive oil
¼ cup parsley leaves, chopped fine
1 tablespoons lemon juice
4 tablespoons hot honey spice mix (see recipe, below)
2 cups honey
6 tablespoons Louisiana hot sauce
2 ½ teaspoons lemon juice
1 tablespoon lemon zest (optional)
1 tablespoon additional chopped parsley (optional)
Hot Honey Spice Mix
2 ½ tablespoons cayenne pepper
¼ cup granulated garlic
6 tablespoons smoked paprika
¼ cup onion powder
1 tablespoon light brown sugar
½ teaspoon coarse ground black pepper
Both sweet and spicy, these Baked Chicken Thighs with Hot Honey featuring Do Good Chicken’s boneless skinless chicken thighs are a delicious addition to dinner!
Dark, tender, flavorful, and oh-so-juicy, chicken thighs are easy to cook and budget-friendly to boot.
Directions for Chicken
Marinating Chicken
- Place first 4 ingredients and 2 tablespoons of hot honey spice mix in a small mixing bowl and mix thoroughly.
- Cover and place in the refrigerator and allow to marinate for 2-3 hours.
Cooking Chicken
- Make the hot honey by combining honey, Louisiana hot sauce, lemon juice, and 2 tablespoons hot honey spice mix in a bowl. Set aside.
- Heat an 8” round or 10” oval cast iron skillet over medium-high heat.
- Place the marinated thighs in the pan.
- Cook for 4 minutes to brown the skin.
- Using tongs, turn over each thigh and return to the pan to continue cooking.
- Drizzle additional 2 tablespoons of hot honey over each thigh.
- Transfer pan to a 400 degree oven and bake for 8-10 minutes or until fully cooked. (Less if using boneless, skinless chicken.)
- Remove pan from the oven and place on a board.
- Sprinkle the top of each thigh with lemon zest and finely chopped parsley leaves, if desired.
Directions for Hot Honey Mix
- Combine all ingredients in a mixing bowl with a whisk.
- Transfer to a small container, cover, and store at room temperature.
Tips
- No hot honey? Halve the hot honey mix spices for the marinade and marinate as directed. Skip making the hot honey recipe for drizzling and instead use store-bought hot honey in step 6.
- Save the marinating time and use the ingredients as a rub. Coat the chicken thighs in the 3 tablespoons of olive oil. Combine the parsley, lemon juice, and hot honey spice mix and rub all over both sides of the thighs before adding to the skillet.
- If hot honey isn’t your thing, cut back on the cayenne and paprika or skip them all together. Instead of using a store-bought hot honey, use regular. Still totally tasty!
