Carolina BBQ Chicken

Ingredients

1 pound Do Good Chicken Boneless Skinless Chicken Breast, cut into bite-size pieces


1 tablespoon olive oil


1 tablespoon Creole mustard (like Zatarain’s)


1 tablespoon honey


½ teaspoon salt


¼ teaspoon coarse ground black pepper


1 cup Carolina BBQ sauce (store-bought or homemade, see recipe below)


¼ cup pickled mustard seeds or wholegrain mustard


1 tablespoon chives

Carolina BBQ Sauce

6 tablespoons yellow mustard


1 ½ tablespoons honey


1 ½ tablespoons light brown sugar


3 tablespoons apple cider vinegar


1 ¼ teaspoon pureed chipotle peppers 


1 ¼ teaspoon ketchup


1 ¼ teaspoon Worcestershire sauce


1 teaspoon granulated garlic


2 ½ teaspoon coarsely ground black pepper

What do you get when you take boneless, skinless chicken breasts, cut them into bite-size pieces, marinate them in a zesty Creole mustard-and-honey sauce, cook them to perfection, and then tossed in a thick-and-tangy Carolina barbecue sauce? The most amazing Carolina BBQ Chicken ever — that’s what!

Directions for Chicken

Marinating Chicken 

  1. Place first 6 ingredients in a small mixing bowl and mix thoroughly.
  2. Cover and place in the refrigerator and allow to marinate for 1 hour.

Baking Chicken  

  1. Heat a cast iron skillet over medium-high heat.
  2. Add oil to pan and immediately add marinated breast bites.
  3. Cook for 2-3 minutes then turnover and continue to cook for 2-3 more minutes or until fully cooked. 
  4. Remove from the pan and place cooked bites in a small mixing bowl.
  5. Add BBQ sauce to the bowl and gently toss the bites with to coat on all sides with sauce.
  6. Pile bites in a bowl or on a small plate.
  7. Dollop pickled mustard seeds or wholegrain mustard over the top of breast bites, sprinkle them with chives, and serve.

Directions for Carolina BBQ Sauce

  1. Place all of the ingredients in a stainless steel mixing bowl.
  2. Whisk to combine.
  3. Place in a small container, cover, and refrigerate until needed. 
  4. Heat slightly to warm before using for breast bites.

Tips

  • While making your own Carolina BBQ sauce recipe isn’t as hard as it may look, it does require time and ingredients you may not have. Many grocery store chains sell bottled Carolina BBQ sauce. Add your preferred amount over the chicken bites and store the rest in the fridge for another time. 
  • If the idea of pickled mustard seeds, wholegrain mustard, or chives sprinkled over the top of the chicken bites sounds over-the-top, skip it. 
  • We quickly cooked this Carolina BBQ Chicken in a cast-iron skillet, but you could just as easily grill these chicken bites for a few minutes on each side before smothering in awesome sauce.
