Healthy Chicken Salad Sliders

Ingredients

1 lb boneless, skinless Do Good Chicken Breasts, diced


1 cup plain greek yogurt


1/4 cup mayo


1/2 cup dried cranberries


1/4 cup dried cherries


1/4 cup slivered almonds


1/4 cup fresh dill, chopped


1 lemon, zested


1/2 lemon, juiced


Salt and pepper, to taste


12 Slider buns


Crisp green lettuce

This healthy twist on a classic summer recipe will have you climbing out of the pool for seconds. Our chicken slider includes protein-rich greek yogurt, mayo, dried cherries and cranberries, fresh dill, lemon zest, and thinly sliced almonds for a delicious crunch. Simply bake your boneless, skinless Do Good Chicken breasts, dice, and get ready to try the last slider recipe youโ€™ll ever need to bookmark.

  1. Preheat oven to 375F and drizzle the chicken breasts with olive oil and season evenly with salt and pepper.
  2. Add chicken breasts to a baking sheet and bake for 30 minutes, flipping halfway through.
  3. Remove the chicken from the oven and allow to cool before chopping.
  4. In a large bowl add greek yogurt, mayo, dried cranberries and cherries, almonds, dill, lemon zest, and lemon juice and combine. Add salt and pepper to taste.
  5. Dice up your chicken breasts and add them to your large mixing bowl and fold together to combine.
  6. Lay a piece of crisp lettuce on the bottom halves of each slider bun and top with a large scoop of chicken salad.
