Hot Honey Chicken Sandwich with Butter Lettuce and Miso Mayo

Ingredients

Chicken Marinade

2 ½ lbs. Boneless, Skinless Do Good Chicken Breast


¼ cup olive oil


1 lemon, juiced


3 garlic cloves, minced


1 teaspoon salt


½ teaspoon oregano


½ teaspoon crushed red pepper flakes

 

Hot Honey Glaze

¼ cup honey


2 teaspoons lemon juice


1 to 2 tablespoons Calabrian Chili, more or less depending on desired spice level


1 garlic clove, crushed

 

The Sandwiches

½ cup mayonnaise


1 tablespoon white miso paste


2 teaspoons hot sauce, of choice


4 brioche burger buns


4 leaves of butter or green leaf lettuce

Another recipe from our favorite Chef Partner, Tom Colicchio (if you missed his first recipe, check that out here). Tom’s hot honey is the condiment of the summer! This one features cayenne and lemon juice for a perfect balance of sweetness, acidity, and heat. To make this dish, simply marinate your chicken breasts, whip together a quick miso mayo, and then head to the grill. Top your toasted brioche buns with your miso mayo, crispy grilled chicken, and butter lettuce, then brush with hot honey to serve (and await the well-deserved applause from your family and friends).

  1. In a large bowl, whisk together the olive oil, lemon juice, garlic, salt, oregano, and red pepper flakes, if using. Add the Do Good ChickenTM breasts to the bowl and coat well to marinate in the fridge for 30 minutes.
  2. While the chicken is marinating, make the miso mayo by mixing together mayonnaise, white miso, and 2 teaspoons of hot sauce until combined. Place in the fridge until sandwich assembly.
  3. After 30 minutes, remove the chicken from the fridge and let it come to room temperature while you preheat the grill. Turn the grill to medium heat.
  4. When the grill is hot, lay the chicken on the grates.
  5. Grill the chicken for about 12 minutes per side.
  6. While the chicken is cooking, place all hot honey ingredients into a small pot over medium heat. Mix until combined, about 5 to 6 minutes. Remove from the what and cool.
  7. Brush a little olive oil on both sides of the brioche buns and grill for 30 seconds to get a little color.
  8. Once the chicken is cooked through, the edges should be crispy and the internal temperature should be 165F, brush the chicken with the hot honey.
  9. Transfer to a plate and let rest for a couple of minutes. You can enjoy the hot honey chicken whole or sliced – whatever your preference is!
  10. To the bottom of your brioche bun, slather on a generous portion of the miso mayo, then top with the lettuce and your grilled hot honey chicken breast. Add a swipe of miso mayo to the top bun and place on top of your hot honey chicken.
