Thai Chili Chicken Bites
Ingredients
1 pound of Do Good Chicken Boneless Skinless Chicken Breast, cut into bite-size pieces
2 teaspoons sesame oil
1 teaspoon basil leaves, finely chopped
1 teaspoon lime juice
6 teaspoons sweet chili sauce
ยผ teaspoon Thai chili powder
1/8 teaspoon toasted white sesame seeds
Basil leaves for garnish (optional)
To make these Thai Chili Chicken Bites, pieces of tender Do Good Chicken chicken breasts are marinated in lime, basil, sweet chili sauce, and sesame oil and then dusted in Thai chili powder and grilled to perfection. And, for the final touch, the cooked Sweet Thai chili chicken is tossed in more sweet chili sauce and then garnished with sesame seeds and basil.
Directions
Marinating Chicken
- Place first 4 ingredients plus 2 teaspoons of sweet chili sauce in a small mixing bowl and mix thoroughly.
- Cover and place in the refrigerator and allow to marinate for 1 hour.
Grilling Chicken
- Place the breast bites in a small plate and sprinkle with Thai chili powder over all sides of bites.
- Place breast bites on a grill or grill pan.
- Cook for 2-3 minutes then turnover and continue to cook for 1-2 more minutes or until fully cooked.
- Remove from the grill and place cooked bites in a small mixing bowl.
- Add remaining sweet chili sauce to the bowl and gently toss the bites to coat on all sides.
- Pile bites in a bowl or on a small plate.
- Sprinkle top of breast bites with sesame seeds and garnish with additional basil leaves (optional) and serve.
Tips
- Most grocery store chains carry a version of inexpensive sweet chili sauce in the international or ethnic food aisle. However, if you cannot find it or want to use another ingredient, a great substitution is to mix together two teaspoons of hot sauce and two tablespoons of honey. Divide and use it as directed.
- Thai chili chicken wings and Thai chicken chili thighs are two other great options that would work well with these ingredients. For the wings, follow the recipe cooking them whole. For the thighs, cut into three to four strips instead of bites and cook as directed.
- Craving the taste of these Thai chili chicken bites but itโs too cold/wet/tiring to grill? Cook them instead in a grill pan on your stovetop or bake in the oven at 375ยฐF for 20-25 minutes or until the internal temperature of the largest piece reaches 165ยฐF.
